Carrot ginger cakes with cream cheese frosting.


I made this cake two days ago...

The cake is very rich and it is something that I consider as a heavy dessert.

Infusion of ginger with carrots, as strange as it may sounds, works perfectly for this cake. I also complement the cake mixture with a small helping of crush pecans and walnuts.

The cake is layered and smoothered with a sumptous volume of cream cheese frosting. Because of this, this cake must be adequately refrigerated prior to serving so that it gains consistency.




The orange ribbon on the cake is made using carrot as the base ingredients. Proud to say that not a drop of artificial colouring was use in this cake.

On a personal note, my kids absolutely adore this cake. They took small nibbles at a time and before I knew it, a quarter of it was gone by day's end. I was simultaneosly flattered (that they love my cooking) and horrified (that they are able to down such a huge chunk of heavy cakes!).

Well, kids don't lie. If they love it.... :)

Besides this monstrous chunck, I m considering of making this cake in a slightly smaller or leaner version. If you are interested, order or inquiry are greatly welcome.
